APPLE RECIPES


APPLE CREAM COFFEE CAKE

A great cake to nibble on as you discuss your orchard plans with your neighbors!

1/2 cup butter
1 cup white sugar
1/2 tsp. vanilla
2 eggs
2 cups sifted flour
1 tsp. baking powder
1/2 tsp. salt
1 cup sour cream
3-4 medium apples, pared and sliced
1/2 cup chopped nuts
2-3 tsp. cinnamon
1/2 cup sugar

Cream butter and add 1 cup sugar. Add eggs and vanilla and beat thoroughly. Add sifted dry ingredients a third at a time alternating with sour cream. Beat after each addition until smooth. Spread half the batter in a greased floured 9" tube pan. Top with apple slices. Mix nuts, cinnamon and sugar together and sprinkle half on top of the apples. Top with remaining batter and sprinkle with the rest of the nut mixture. Bake at 375 degrees for 40-45 minutes. Allow to cool 30 minutes before removing from pan. Serve warm with ice cream or whipping cream or cold as a coffeecake.



CHEESY APPLE CRISP

A twist on an old favorite. Try it with Westland apples

3 cups sliced apples
1/3 tsp cinnamon
3/8 cup of water
1 tsp. lemon juice
3/4 cup sugar
1/2 cup flour
1/8 tsp. salt
1/4 cup butter
3/4 cups grated cheese (sharp cheddar works well)

Place sliced apples in a baking dish. Sprinkle with cinnamon, add water and lemon juice. Combine sugar, flour and salt, work in butter to form crumbly mixture. Stir in grated cheese. Spread crumb mixture over apples and bake at 350 degrees for about 30 minutes. Apples should be tender and the crust brown and crisp.
